This epic spicy burger has got a bit of everything going on. Crispy, spice-loaded fried chicken, grilled halloumi, and a bold, spicy ketchup, all stacked in a toasted bun. With gherkins and crunchy white cabbage slaw for a slither of freshness.

Pickling time… as my home-grown cherry tomatoes

Pickling time… as my home-grown cherry tomatoes were definitely not progressing to maturity on my chilly window sill.
The pickle is a sweet, sour spicy mix of mustard & coriander seeds, sugar & Willy's Fire Cider.
Remember to pierce each tomato with a skewer so the pickling liquid can penetrate them. If you love pickled veg/fruit as much as I do, these will go with practically whatever you choose to put them with!

Flaky Apple Tart... If you are still happily wading through apples (as I am), this is a fabulously quick and easy dessert. And it pairs deliciously with ice cream & dry cider! 🍎🍺

✨ Puff Pastry Apple Tart ✨
Flaky pastry, juicy apples that caramelise as they bake, and all the warm spices.
Ingredients
• 1 sheet frozen puff pastry
• 4–5 medium apples, peeled + sliced
• 3 tbsp brown sugar
• 2 tbsp lemon juice
• ½ tsp vanilla
• Pinch of salt
• Pinch of cinnamon + nutmeg (or a good dusting if you like it strong)
• 2 tbsp butter, cubed
• 1 egg (for egg wash)
• Apricot jam
Method
Heat oven to 180°C and line a tray with parchment.
Let puff pastry thaw, then roll it out on a floured surface and transfer to the tray.
Score a border around the edge - about 1/4 inch from the edge (don’t cut all the way through).
Mix apples with sugar, lemon, vanilla, salt + spices.
Warm a little apricot jam and spread it over the pastry.
Arrange apples on top (leave the juices behind). Layer in a pattern and dot with the butter.
Brush edges with egg wash and bake 20–30 min, until golden & tender.
Brush with more warm apricot jam.
Serve warm with ice cream or cream. ✨
